Every holiday has its own gastronomic tradition, and at Easter it’s the famous Colomba pasquale!
If you don’t know this dove-shaped brioche, it’s time to come and discover it!
This very old Italian tradition comes from the Lombardy region, the region of Milan. Legend has it that during the siege of Pavia in 572 (hence in Lombardy), a confectioner offered this famous brioche to King Albiono as a sign of peace.
This is why, at Easter, the dove is traditionally served in Italy as a symbol of peace.
This brioche, which is very similar to the famous Christmas Panettone, is usually sprinkled with almonds and sugar. However, it is available in several flavours, which you can find in our shops!
How about making your own dove? To make a typical Easter dove, here is what we suggest:
- flour 00
- yeast
- eggs
- milk
- butter
- sugar
- bitter almond essence and crushed bitter almonds
- candied orange peel
- granulated sugar and whole almonds for the topping
Now all you have to do is enjoy your dove with your family!
